  1. Combine all ingredients and mix until the Salt and Sugar are dissolved.
  2. Set aside for at least half an hour before serving so ingredient flavors can bloom.
  3. Mix well immediately before serving.
Recipe Notes

Add the salt and sugar to taste.

Sugar is added to cut the acidity and add an extra flavor enhancing element to the dressing.

For extra dimension,  add 1/2 tsp of Medium Chili Powder  while combining ingredients.

Chicken Curry

A couple of things inspired me to go to the classic side with our Curry.

I got lunch the other day from a local Thai food truck where I have re-acquainted myself with the love of Pad-see-ewe that dates back to teenager-hood on the horse ranch, and a recent customer who gave me a challenge with a great sounding combination.

So, Tonight, I grabbed a can of Coconut Milk, and whatever vegetables I had handy in the fridge and set to work on dinner.

It was not the Thai Curry at all that I had the other day. I would have to get me some LemonGrass, Fresh Ginger, and a small host of other ingredients I don’t usually have to pull that one off but it was quite good. Leftovers will not last long.

  1. In a medium sized saucepan, Brown Chicken.
  2. Add Coconut Milk, Curry, Salt and Sugar, stir to combine.
  3. Let the mixture come to a simmer for about 10 Minutes, stirring occasionally
  4. Add Vegetables, and simmer until the broccoli turns bright green, and starts to soften.
  5. Serve as a soup, or with your favorite bread on the side. Bon Appetite!
Recipe Notes

Add some lemon juice just before serving for a small burst of tartness to the Curry.

  1. Preheat oven to 350°
  2. Line your pie-pan with half of your crust pastry and set aside.
  3. Have your second half of pastry rolled out and ready to go for upper crust.
  4. Pour the Lemon Juice over your apples and toss to coat
  5. Mix your sugar, flour/starch, Sweet Breakfast, and salt together
  6. Pour over apples, and toss to coat.
  7. Put mixture into pie pan, creating a hill in the middle of the pan with the apples that don’t fit flat.
  8. Place your butter evenly around the top of the apples
  9. Place second crust over top, crimp edges together and slash holes for steam
  10. Bake for 50-60 minutes and cool before serving.
